Muslimah Foodie | Healthy Roast Potato & Veg
It’s a Sunday so I’m just sitting at home, cleaning, got some conditioner sitting in my hair, catching up on my favourite TV shows and I’m cooking. Now, the photo doesn’t look so appealing but, it’s gorgeous!
I can’t be bothered to go into detail as to how I made this but, I washed baking potatoes properly and then pricked holes into them using a fork (it allows the potato to be cooked thoroughly) and I chopped mushrooms, tomatoes and broccoli and added some raw spinach. Drizzled some Extra Virgin Olive Oil, salt and dried mint then mixed it all together and bunged it in the oven for about 45 minutes.
